Simon's smooth voice and unique touch on the piano are particularly suitable for restaurants and wine bars. His constantly-evolving repertoire contains many songs from past and present suitable for background music which create a relaxing atmosphere for dining and conversation. He was described in Spain as the perfect "musical canapé".

He will continue playing every other Thursday night on the Wirral at the Oxton Bar & Terrace as from February 7th 2008. Sometimes, interaction with the customers is an important part of the performance with some light-hearted banter and a series of requests. On other more formal occasions, one song blends seamlessly into another and customers can happily engage in conversation with the music remaining unintrusive in the background. Recognising the requirements of each venue has been key to Simon's continued success.
